Grain-Free, Sugar-Free Berry Parfait for the 4th of July

Ingredients:

  • For the Whipped Coconut Cream:

    • 1 can of full-fat coconut milk (chilled overnight)

    • 1 tsp vanilla extract

    • Stevia or monk fruit sweetener to taste

  • For the Berry Layers:

    • 1 cup fresh blueberries

    • 1 cup fresh strawberries, sliced

    • 1 cup fresh raspberries

Instructions:

  1. Prepare the Whipped Coconut Cream:

    • Open the chilled coconut milk and scoop out the solid cream into a mixing bowl.

    • Add vanilla extract and your preferred sweetener.

    • Whip with a hand mixer until fluffy.

  2. Assemble the Parfait:

    • In a clear glass, layer whipped coconut cream, blueberries, more cream, strawberries, and raspberries.

    • Repeat layers if your glass is tall.
