Grain-Free, Sugar-Free Berry Parfait for the 4th of July
Ingredients:
For the Whipped Coconut Cream:
1 can of full-fat coconut milk (chilled overnight)
1 tsp vanilla extract
Stevia or monk fruit sweetener to taste
For the Berry Layers:
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1 cup fresh raspberries
Instructions:
Prepare the Whipped Coconut Cream:
Open the chilled coconut milk and scoop out the solid cream into a mixing bowl.
Add vanilla extract and your preferred sweetener.
Whip with a hand mixer until fluffy.
Assemble the Parfait:
In a clear glass, layer whipped coconut cream, blueberries, more cream, strawberries, and raspberries.
Repeat layers if your glass is tall.
Serve Immediately:
